Karen’s Kuchens serves homemade dessert at hotdish festival

FARGO, N.D. – (Valley News Live) More than a dozen local restaurants served their best hotdish at Drekker Brewing Company. The second annual event had a special guest this year: Karen’s Kuchens.

The Larimore couple received the invitation just 3 days before and got to work, making 60 kuchens.

“It’s just a normal days’ baking for Karen,” said Ken Schwandt, Karen’s husband.

A kuchen is a traditional German dessert. It’s something Karen’s family has been cooking up her entire life.

“I’m sure it’s my great grandmothers’ recipe, so I’ve got it in my head right now,” said Karen Schwandt of the secret recipe.

For Karen, it’s a way to feel close to her ancestors.

“It’s hard to believe that I’ve gotten this far for just something I love to do,” said Karen.

Karen’s Kuchens also holds the spot for being the best kuchen in North Dakota in 2018, awarded by USA Today.

“Those who never had it before started with the plain sugar kuchen and worked their way to the fruit,” said Ken. “So no one had just one!”

They were serving up dessert, and memories with this classic dish.

“The people that knew what it was thanked us for the memories. We heard a lot about grandma and great-grandma and so on,” said Ken.

The kuchen is similar to a coffee cake filled with custard, and sometimes fruit or veggies. It was a fan favorite at the festival.

“It was nuts. It was fun. It was a real blast,” said Ken. “Hopefully they will ask us to come back next year.”
